What's a Mersea Mudcake®?
In a nutshell, they're delicious, extra special chocolate brownies made to order.
What makes them so special? Inspired by their seaside surroundings of Mersea Island and the Blackwater estuary, Mersea Mudcakes are hand crafted using as many local and homemade elements as possible. Good, wholesome ingredients like local hens eggs and local flour, and small batch bakes are the key to our mudcakes having uniquely scrumptious flavours and textures.
Mersea Mudcakes are not just a yummy treat, they're a souvenir from a coastal holiday, a gift for a loved one, a surprise in the post, but most of all they're a 'little taste of Mersea'.
Mersea Island?
Mersea Island is a magical little place. Settled since Roman times; it is the most easterly inhabited island in the United Kingdom. It's a tiny estuary island full of old-world charms, cut off from the mainland during high-tides. It has a thriving fishing community and is a mecca for seafood fans.
Mersea is celebrated for its world class sailors and it's native oysters, but we think it has something else to be proud of - its mud! Mersea's mudflats and salt marshes are as beautiful as they are essential. They're a unique habitat to local wildlife and a regular stopping spot for migratory birds.
Here at Mersea Mudcakes, we love the mud, and every Mudcake is a celebration of this often overlooked jewel in Mersea's crown.
About Us
Mersea Mudcakes is the newest venture by Irish gal' Mim O'Neill. Following on from her successful celebration cake business, she decided to turn her hand to chocolate brownies - her all time favourite bake!
Inspired by her coastal surroundings and the Mersea mudflats, she set up Mersea Mudcakes in 2018. What started as a local business catering for the Island's brownie lovers, has now expanded to cater for the whole country's sweet toothed clientele, thanks to the Mudcakes mail order service.
When Mim's not baking, she can be found doing yoga, collecting beach treasures, tending to her two curious cats and crazy dog, chasing after her three energetic children or immersed in another one of her husband's hairbrained sailing adventures.
